Carole Marshall

Carole graduated from Northumbria University in 2006 and established a successful nutritional consultancy before joining the teaching team as a part-time Senior Lecturer in Human Nutrition and Food Science in 2008. Carole teaches nutrition at undergraduate and postgraduate levels.

She is a Registered Nutritionist with the UK Voluntary Register of Nutritionists, a member of the Nutrition Society and a STEM ambassador.

Carole is still operating the consultancy that focuses on nutritional provision for the older adult and the under-fives in the Tyne and Wear and North Yorkshire areas through the university as well as using her expertise in dietary analysis to attract consultancy work to the university. Most recently, Carole worked with the Hadrian Healthcare Group analysing and optimising their seasonal menus with the executive chef.

Carole is dedicated to increasing nutritional awareness in the care of the elderly (both free living and in residential care) and the very young training those responsible for the nutritional care of such vulnerable groups. Carole has extensive expertise in public engagement, including lecturing at the Centre for Life and interviewed on TV and radio.

Carole’s research activities include investigating levels of malnutrition in the elderly population and the use of food fortification and nursery food provision for the under-fives.
