Carole graduated from Northumbria University in 2006 and established a successful nutritional consultancy before joining the teaching team as a part-time Senior Lecturer in Human Nutrition and Food Science in 2008. Carole teaches Applied Nutrition, Food Science and Introduction to Biological and Food Sciences.
She is a Registered Nutritionist with the UK Voluntary Register of Nutritionists, a member of the Nutrition Society and a STEM ambassador.
Carole is still operating the nutrition consultancy which focuses on nutritional provision for the older adult in the Tyne and Wear and North Yorkshire areas on a part-time basis as well as using her expertise in dietary analysis to attract consultancy work to the university. Most recently Carole has been working with the Hadrian Healthcare Group through the university analysing and optimising the seasonal menus with their executive chef and she is about to start a two year training programme to train all their staff in nutritional awareness for the older adult and older adult with dementia.
Carole’s current research activities include investigating levels of malnutrition in the elderly population and the use of food fortification and texture modification. She is interested in increasing nutritional awareness in the care of the elderly (both free living and in residential care) and the very young having recently been involved in research into nutritional provision for the under fives.
Carole is also part of the Food and Nutrition Network, which brings together the research, facilities and expertise of Northumbria University's Research Centre’s working in Food & Nutrition and is a member of the Institute of Food Science and Technology.
